# What is miso and where can I buy it?

Miso is a dark creamy paste obtained by fermenting a pulse (normally soy) and a grain. It has a very pleasant umami taste that enhances the flavours of the recipes. Be careful not to use too much though, as it’s also very salty. If you need to avoid gluten, make sure you buy gluten-free miso (check the label).
You can buy it in most well-stocked supermarkets, health food stores, and online.
