I heard that there are substances in plant-based foods that prevent the absorption of nutrients. Is that true?

It is true that plants contain certain molecules called anti-nutrients: however, this does not mean that they are ‘bad’. Plants are so rich in nutrients that even if you did not absorb a very small fraction of them (we are talking about very small percentages), you would not be affected at all. On the contrary, some of these anti-nutrients even have beneficial effects on your health.
